In Avocado world maturity and ripeness are not synonymous. The ripening process starts after an avocado stem is cut. Ripening process in avocado fruit is regulated by a gas called ethylene which is produced naturally by the fruit itself and induces softening of fruit internal tissues.
As avocados do not ripen on the tree they can be stored on the tree for months after they reach maturity which is a great advantage.
You can pick some when you need ripe avocados a few days later, Doesn't it sound like a perfect fruit tree?
Different avocado varieties vary in their time of achieving maturity and tree storage capacity.
There are some factors that can affect time of maturation in avocados as an example the location of the tree, southwest faced planting location can speed up maturity because of increasing light and heat, other factors that also affects maturation are elevation, geographical location and local temperature differences, All these factors reflect the connection between temperature and the plant's internal physiological activity.
For every region weather will vary from year to year which can advance or delay maturation of avocado fruit and also effect the length of time avocado fruits can be stored on the tree.
